These Summer Cupcakes are the perfect light and sweet treats for sunny days. With a refreshing lemon flavor and the delightful addition of fresh berries, they bring joy and fun to your summer gatherings.
Ingredients
1 1/4 cups (160 g) all-purpose flour
1/4 cup (30 g) cornstarch
1 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp fine sea salt
1/2 cup (115 g) unsalted butter
softened
2/3 cup (130 g) granulated sugar
2 tbsp honey
2 large eggs
room temperature
1 tsp pure vanilla extract
2 tsp finely grated lemon zest
1/2 cup (120 g) plain Greek yogurt
1/4 cup (60 ml) milk
room temperature
3/4 cup fresh berries
lightly floured
3/4 cup cold heavy cream
3/4 cup plain Greek yogurt
3 tbsp powdered sugar
sifted
1 tsp lemon juice
1/2 tsp vanilla extract
Fresh berries and lemon zest
for garnish
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
- In a bowl, whisk together the flour, cornstarch, baking powder, baking soda, and sea salt. Set aside.
- In a separate bowl, cream the softened butter and granulated sugar until light and fluffy. Add honey, and mix well.
- Beat in the eggs one at a time, followed by the vanilla extract and lemon zest.
- Alternate adding the dry ingredients and the Greek yogurt with milk, mixing until just combined.
- Gently fold in the fresh berries, taking care not to overmix.
- Scoop the batter into the prepared cupcake liners, filling each about 2/3 full.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. Allow cupcakes to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- For the frosting, whip the cold heavy cream with Greek yogurt until soft peaks form. Gradually add the powdered sugar, lemon juice, and vanilla extract until well combined.
- Frost the cooled cupcakes with the lemon Greek yogurt frosting and garnish with fresh berries and lemon zest.
Notes
For best results, ensure all wet ingredients are at room temperature. Feel free to substitute with any fresh berries of your choice.
