4 large eggs
120 g xylitol
plus 60g for the drizzle
150 g Greek yoghurt
250 g almond flour
50 g oat flour
1.5 tsp baking powder
1/2 tsp bicarbonate of soda
1 large lemon
zest & juice
Instructions
- Preheat your oven to 180°C (350°F) and grease a cake pan.
- In a large bowl, whisk together the eggs and 120 g of xylitol until frothy.
- Add Greek yoghurt, almond flour, oat flour, baking powder, bicarbonate of soda, and lemon zest and juice. Mix until combined.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- While the cake cools, prepare the drizzle by mixing 60 g of xylitol with lemon juice in a small bowl.
- Drizzle the lemon syrup over the cooled cake before serving.
Notes
Make sure to let the cake cool completely before drizzling the lemon syrup for best results.
