  • 1/2 cup (1 stick) unsalted butter
  • 4 large egg yolks
  • 1 1/2 cups flaked coconut
  • 1 cup chopped pecans
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a pie dish.
  2. In a saucepan, combine 1 cup granulated sugar, 1/2 cup flour, and 1/4 teaspoon salt.
  3. Whisk in 1/2 cup milk and 1/2 cup water, then add the beaten egg yolks.
  4. Cook over medium heat, stirring continuously until the mixture thickens. Remove from heat and stir in 1/2 cup butter and 1 teaspoon vanilla extract until smooth.
  5. Fold in 1 cup semisweet chocolate chips until melted and well combined.
  6. Pour the chocolate mixture into the prepared pie crust and bake for 30 minutes.
  7. While the pie is baking, prepare the gooey coconut-pecan topping by combining 1 cup granulated sugar, 1/2 cup evaporated milk, and 1/2 cup butter in a saucepan.
  8. Bring to a boil and cook for 2-3 minutes, stirring constantly, then remove from heat and stir in the beaten egg yolks, 1 1/2 cups flaked coconut, 1 cup chopped pecans, and 1 teaspoon vanilla extract.
  9. Once the pie is baked, remove it from the oven and evenly spread the topping over the chocolate filling.
  10. Return the pie to the oven and bake for an additional 10-15 minutes until the topping is golden brown.
