Ingredients
6 to 8 patty pan squash or large zucchini
2 tablespoons extra virgin olive oil
1/2 sweet onion chopped
1 to 2 garlic cloves minced
1/2 cup dry quinoa
1 cup beef broth low sodium
1 cup parmesan cheese freshly shredded
1 cup spinach frozen thawed squeezed and drained
1 pound grass fed beef ground
kosher or sea salt to taste
black pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the patty pan squash and scoop out the insides with a spoon, creating bowls for stuffing.
- In a large skillet, heat the olive oil over medium heat. Add chopped sweet onion and sauté until translucent.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the ground beef to the skillet and cook until browned and fully cooked through.
- Rinse quinoa under cold water, then add it to the skillet along with the beef broth. Bring to a boil, then reduce heat and cover, cooking until quinoa is fluffy.
- Remove from heat and stir in shredded parmesan cheese and prepared spinach until well combined.
- Season the filling with kosher salt and black pepper to taste.
- Stuff each patty pan squash with the filling, packing it tightly.
- Place stuffed squash in a baking dish and cover with foil. Bake for 25-30 minutes, until the squash are tender.
- Remove foil and bake for an additional 5 minutes to brown the tops slightly before serving.
Notes
For added flavor, try using different types of cheese or adding herbs like parsley or thyme to the stuffing mixture. Ensure to squeeze out as much liquid from the spinach as possible!
