Streuselkuchen is a classic German crumb cake with a rich, buttery dough and a delightful crumb topping, perfect for any occasion.

Ingredients

Scale
  • 2/3 cup milk
  • warm
  • 3 cups all-purpose flour
  • 2 1/2 teaspoons dry instant yeast
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • a pinch of salt
  • 1/3 cup butter
  • room temperature
  • 1 medium-sized egg
  • room temperature
  • milk or water for brushing
  • 1 cup butter
  • 2/3 cup sugar
  • 1 2/3 cups all-purpose flour
  • powdered sugar
  • optional

Instructions

  1. In a bowl, combine warm milk, yeast, and a pinch of sugar; let it sit for about 5 minutes until foamy.
  2. In a large mixing bowl, combine flour, granulated sugar, vanilla extract, and salt.
  3. Add the butter and egg to the flour mixture, then pour in the yeast mixture and knead until a smooth dough forms.
  4. Cover the bowl with a clean cloth and let it rise in a warm place for about 1 hour, or until doubled in size.
  5. While the dough is rising, prepare the topping by mixing butter, sugar, and flour until crumbly.
  6. Preheat the oven to 350°F (175°C) and grease a baking pan.
  7. Once the dough has risen, punch it down and spread it into the prepared baking pan.
  8. Sprinkle the crumb topping evenly over the dough and brush the surface with milk or water.
  9. Bake in the preheated oven for about 30 minutes or until golden brown.
  10. Let it cool slightly before serving, and dust with powdered sugar if desired.

Notes

Make sure the milk is warm, not hot, to activate the yeast effectively. You can vary the toppings by adding fruit or spices.
