A vibrant and refreshing Street Corn Pasta Salad that combines the classic flavors of street corn with hearty pasta, perfect for summer gatherings.
Ingredients

about 400g of pasta
2 roasted corn cobs
3 green onions
1 shallot
2 jalapenos
1/2 cup cilantro
1 cup cotija cheese
1 cup sour cream
1/2 cup mayo
3 cloves garlic
juice and zest of 1 lime
1 tsp smoked paprika
1 tsp chili powder
1 tsp salt & pepper
Instructions
- Cook the pasta according to package instructions, then drain and let cool.
- In a large bowl, combine the roasted corn kernels, chopped green onions, diced shallot, diced jalapenos, and chopped cilantro.
- In a separate bowl, mix together the cotija cheese, sour cream, mayo, minced garlic, lime juice, lime zest, smoked paprika, chili powder, salt, and pepper to create the dressing.
- Add the cooked pasta to the vegetable mixture and pour the dressing over it. Toss until everything is well coated.
- Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
