Ingredients
1 ½ cups fresh or frozen strawberries

¼ cup granulated sugar
1 tablespoon lemon juice
1 tablespoon cornstarch mixed with 1 tablespoon water
1 ½ cups graham cracker crumbs

24 ounces (3 blocks) cream cheese
softened
1 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
1 cup sour cream
¼ cup heavy cream
Instructions
- In a saucepan, combine strawberries, sugar, lemon juice, and cook over medium heat until strawberries soften.
- Stir in cornstarch mixture and cook until thickened. Remove from heat and let cool.
- In a bowl, mix graham cracker crumbs, sugar, and melted butter to form the crust. Press into a springform pan.
- In a mixing bowl, beat the softened cream cheese until smooth. Gradually add sugar, then add eggs one at a time, mixing well.
- Stir in vanilla extract, sour cream, and heavy cream until well combined.
- Pour half of the cheesecake filling into the crust, then drop spoonfuls of the strawberry sauce on top. Swirl with a knife and pour remaining filling on top.
- Bake at 325°F (160°C) for 30-35 minutes until set. Let cool, then refrigerate for at least 4 hours before serving.
Notes
For best flavor, use fresh strawberries when in season. Ensure cheesecake is completely cooled before refrigerating to avoid cracks.
