Ingredients
¼ cup vegan protein powder
1 cup sparkling water OR regular water divided
1 ¼ cups all purpose flour
1 tablespoon cornstarch
1 tablespoon granulated sugar
1 cup almond milk
2 tablespoons coconut oil melted
plus more for frying
Strawberries for serving
Vanilla coconut yogurt for serving
Instructions
- In a large mixing bowl, combine the vegan protein powder, all-purpose flour, cornstarch, sugar, and almond milk. Whisk until smooth.
- Gradually add the sparkling water, continuing to whisk until the batter reaches a pourable consistency.
- Stir in the melted coconut oil and mix well.
- Heat a non-stick skillet over medium heat and grease it lightly with additional coconut oil.
- Pour a ladleful of batter into the skillet, swirling to cover the bottom evenly. Cook for 2-3 minutes or until the edges begin to lift.
- Flip the crepe and cook for an additional 1-2 minutes on the other side. Repeat with the remaining batter.
- Serve warm, topped with fresh strawberries and a dollop of vanilla coconut yogurt.
Notes
For fluffier crepes, allow the batter to rest for 10 minutes before cooking. Experiment with different toppings like nuts or fruit preserves.
