1 tsp lemon juice
1 cup strawberries quartered
Instructions
- In a large mixing bowl, whisk together the egg, milk, melted butter, and vanilla extract until combined.
- In another bowl, mix the flour, sugar, baking powder, and salt.
- Combine the wet and dry ingredients until just mixed, being careful not to overmix.
- Heat a skillet over medium heat and lightly grease it with cooking oil.
- Pour small amounts of batter into the skillet to form tacos, cooking each side until golden brown.
- For the filling, whip the heavy cream until soft peaks form, then fold in the strawberry jam and lemon juice.
- Fill each pancake taco with the whipped cream mixture and garnish with quartered strawberries.
