Ingredients
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup unsalted butter
1 cup granulated sugar
2 tablespoons lemon zest
2 large eggs
1 1/2 teaspoon vanilla extract
1/4 cup milk
1/4 cup sour cream
1/4 cup lemon juice
8 ounces strawberries
3/4 cup unsalted butter
3–4 cups powdered sugar
1 tablespoon whipping cream
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Add the lemon zest, eggs, and vanilla extract, then mix well.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, sour cream, and lemon juice, until everything is well combined.
- Fill each cupcake liner about 2/3 full with batter and bake for 18-20 minutes, or until a toothpick comes out clean.
- Meanwhile, prepare the strawberry frosting by pureeing strawberries in a blender.
- In a mixing bowl, beat the softened butter until creamy, then gradually add the powdered sugar until desired sweetness and consistency are achieved.
- Mix in the pureed strawberries and, if necessary, the whipping cream until smooth.
- Once the cupcakes are cooled, frost them generously with the strawberry frosting.
Notes
Store frosted cupcakes in an airtight container in the fridge for up to 3 days. You can also add lemon slices or fresh strawberries on top for extra garnish.
