These Strawberry Lemon Blondies are a refreshing twist on classic blondies, combining the bright flavors of strawberries and lemons for a delightful dessert.

1 cup unsalted butter
at room temperature
3/4 cup sugar
1 large egg
1/4 cup fresh squeezed lemon juice
2 1/4 cups all purpose flour
1/2 tsp baking powder
1/2 tsp salt
1 cup diced fresh strawberries
1 cup powdered sugar
sifted
1 Tbsp strawberry puree
lemon juice
about 1 Tbsp
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large mixing bowl, cream together the unsalted butter and sugar until light and fluffy.
- Add in the egg and lemon juice, mixing until well incorporated.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the diced fresh strawberries gently.
- Spread the batter evenly in the prepared baking pan and bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Allow to cool completely before adding the glaze.
- For the glaze, in a small bowl, combine the sifted powdered sugar, strawberry puree, and lemon juice. Adjust the lemon juice to achieve a spreadable consistency.
- Spread the glaze over the cooled blondies and let set before slicing into squares.
