1 tbsp sugar
1 tsp baking powder
1/4 tsp salt
1 egg
1 cup milk
1 tsp vanilla extract
1 tbsp melted butter
1 cup cream cheese

1/3 cup powdered sugar
1 tsp vanilla extract
1 cup fresh strawberries
finely chopped
2 tbsp sugar
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, combine the egg, milk, vanilla extract, and melted butter; mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Preheat a non-stick skillet over medium heat and pour 1/4 cup of pancake batter for each pancake. Cook until bubbles form, then flip and cook until golden brown.
- For the cream cheese filling, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
- In a small bowl, mix the chopped strawberries with sugar and set aside.
- Spread a layer of cream cheese filling over each pancake, add a layer of strawberries, and roll up tightly.
- Slice the pancake rolls and serve warm, drizzled with syrup if desired.
Notes
For added flavor, you can customize the filling with other fruits or top the rolls with whipped cream.
