Ingredients

  • 4 chicken breasts
  • 1 tablespoon olive oil or avocado oil
  • 1 teaspoon paprika
  • 1 teaspoon salt divided
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 4 ounces cream cheese softened
  • ¼ cup grated Parmesan
  • 2 tablespoons mayonnaise
  • 1 ½ cups chopped fresh spinach
  • 1 teaspoon garlic minced
  • ½ teaspoon red pepper flakes

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine spinach, cream cheese, Parmesan, mayonnaise, minced garlic, red pepper flakes, and salt; mix until well blended.
  3. Cut a pocket in each chicken breast and stuff it with the spinach mixture.
  4. Rub the outside of the chicken breasts with olive oil and season with paprika, garlic powder, onion powder, and the remaining salt.
  5. Place the stuffed chicken breasts in a baking dish and bake for about 25-30 minutes or until the chicken is cooked through.
  6. Let them rest for 5 minutes before serving.

Notes

You can substitute the cream cheese for ricotta for a different flavor. Feel free to add herbs for extra seasoning.
