- 4 chicken breasts
- 1 tablespoon olive oil or avocado oil
- 1 teaspoon paprika
- 1 teaspoon salt divided
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- 4 ounces cream cheese softened
- ¼ cup grated Parmesan
- 2 tablespoons mayonnaise
- 1 ½ cups chopped fresh spinach
- 1 teaspoon garlic minced
- ½ teaspoon red pepper flakes
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, combine spinach, cream cheese, Parmesan, mayonnaise, minced garlic, red pepper flakes, and salt; mix until well blended.
- Cut a pocket in each chicken breast and stuff it with the spinach mixture.
- Rub the outside of the chicken breasts with olive oil and season with paprika, garlic powder, onion powder, and the remaining salt.
- Place the stuffed chicken breasts in a baking dish and bake for about 25-30 minutes or until the chicken is cooked through.
- Let them rest for 5 minutes before serving.
Notes
You can substitute the cream cheese for ricotta for a different flavor. Feel free to add herbs for extra seasoning.
