Ingredients
2 pounds yellow squash sliced ¼ inch thick (about 5 medium sized squash)
¼ cup butter
½ cup diced onion
½ teaspoon garlic powder
¾ teaspoon salt
½ teaspoon black pepper
½ cup sour cream
1 large egg beaten
1 cup shredded cheddar cheese
½ cup grated Parmesan cheese
1 cup butter crackers finely crushed (about 25 crackers)
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, melt butter over medium heat and sauté the diced onion until translucent, about 5 minutes.
- Add the sliced squash to the skillet and cook until tender, about 8-10 minutes.
- Remove from heat and stir in garlic powder, salt, and black pepper.
- In a large bowl, mix the sour cream, beaten egg, cheddar cheese, and Parmesan cheese.
- Combine the squash mixture with the cheese mixture and pour into a greased baking dish.
- Top with crushed butter crackers for a crunchy topping.
