- 1 cup Brown sugar

- 2 teaspoons Corn starch
- 1 teaspoon Cream of tartar
- 1/2 stick Butter
- unsalted

- 1 teaspoon Fresh lemon juice
- 2 cups All purpose Flour
- 1/2 cup Granulated sugar
- 1/2 cup Brown sugar
- 2 teaspoons Baking powder
- 1 tablespoon Cinnamon
- reserve 1/2 for garnishment
- 1 stick Butter
- unsalted cold
- 1/4 cup Boiling hot water
- 1/2 teaspoon Salt
- 3 tablespoons Granulated sugar
- to dust top of cobbler
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the frozen peaches, granulated sugar, brown sugar, vanilla extract, almond extract, cinnamon, nutmeg, cornstarch, cream of tartar, butter, water, and lemon juice. Stir until well combined.
- Pour the peach mixture into a greased baking dish.
- In another bowl, mix together the all-purpose flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Gradually stir in the boiling water until fully incorporated.
- Spoon the topping mixture over the peach filling, spreading it evenly.
- Sprinkle additional granulated sugar and reserved cinnamon on top.
- Bake for 30-35 minutes or until the topping is golden brown and the filling is bubbly.
- Allow to cool slightly before serving, and enjoy your Southern Peach Cobbler warm!
