2 teaspoons Corn starch

1 teaspoon Cream of tartar

1/2 stick Butter

unsalted

room temperature

2 tablespoons Water

1 teaspoon Fresh lemon juice

2 cups All purpose Flour

1/2 cup Granulated sugar

1/2 cup Brown sugar

2 teaspoons Baking powder

1 tablespoon Cinnamon

1 stick Butter

unsalted cold

1/4 cup Boiling hot water

1/2 teaspoon Salt

3 tablespoons Granulated sugar


Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine frozen peaches, granulated sugar, brown sugar, vanilla extract, almond extract, cinnamon, nutmeg, corn starch, cream of tartar, butter, water, and lemon juice. Mix well and set aside.
  • In another bowl, mix the flour, granulated sugar, brown sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  • Stir in boiling water until just combined.
  • Pour the peach mixture into a baking dish, then drop spoonfuls of the topping over the peaches.
  • Sprinkle the reserved cinnamon and additional granulated sugar on top.
  • Bake in the preheated oven for 30 minutes, or until the topping is golden and the peaches are bubbling.

Notes
