2 teaspoons Corn starch

1 teaspoon Cream of tartar

1/2 stick Butter

unsalted

room temperature

2 tablespoons Water

1 teaspoon Fresh lemon juice

2 cups All purpose Flour

1/2 cup Granulated sugar

1/2 cup Brown sugar

2 teaspoons Baking powder

1 tablespoon Cinnamon

1 stick Butter

unsalted cold

1/4 cup Boiling hot water

1/2 teaspoon Salt

3 tablespoons Granulated sugar

to dust top of cobbler


Instructions

  • Preheat your oven to 350°F (175°C).
  • In a saucepan, combine frozen peaches, granulated sugar, brown sugar, vanilla extract, almond extract, cinnamon, nutmeg, corn starch, cream of tartar, butter, water, and lemon juice. Cook over medium heat until the mixture is bubbly.
  • In a separate bowl, mix all-purpose flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  • Stir in the boiling hot water until just combined. The batter will be lumpy.
  • Pour the peach filling into a greased baking dish and drop spoonfuls of the cobbler topping over the fruit.
  • Sprinkle the top with granulated sugar reserved for garnishment.
  • Bake in the preheated oven for 30 minutes or until the topping is golden brown and the filling is bubbling.
  • Let cool for a few minutes before serving. Enjoy warm!
