  • 2 teaspoons cornstarch or arrowroot
  • 2 cups all-purpose flour
  • ½ cup white sugar
  • ½ cup brown sugar
  • 2 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 12 tablespoons butter chilled and grated
  • ½ cup boiling water
  • ⅓ cup white sugar
  • 2 teaspoons cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the sliced peaches, lemon juice, white sugar, brown sugar, cinnamon, nutmeg, and cornstarch. Mix well and pour into a greased baking dish.
  3. In another bowl, combine the flour, white sugar, brown sugar, baking powder, and salt. Cut in the chilled grated butter until the mixture resembles coarse crumbs.
  4. Stir in the boiling water until the batter is well combined.
  5. Drop spoonfuls of the batter over the peach filling. Smooth it out as needed.
  6. In a small bowl, mix together the white sugar and cinnamon for the topping, and sprinkle it over the batter.
  7. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the peaches are bubbly.
