- skinless chicken thighs
- 1/2 pound smoked sausage (preferably Andouille or Kielbasa)
- sliced
- 1 tablespoon olive oil
- 1 medium onion
- diced
- 2 cloves garlic
- minced
- 1 cup long-grain white rice
- 4 cups chicken broth
- 1 teaspoon paprika
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon dried thyme
- 1/2 teaspoon cayenne pepper (optional
- for heat)
- Salt and black pepper to taste
- Fresh parsley

Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sliced sausage to the pot, cooking for an additional 3 minutes until fragrant.
- Stir in the chicken thighs, paprika, turmeric, thyme, cayenne pepper, salt, and black pepper, cooking until the chicken is slightly browned.
- Add the rice to the pot, followed by the chicken broth. Bring to a boil, then reduce to a simmer.
- Cover and cook for 25-30 minutes, or until the rice is tender and the chicken is cooked through. Remove the chicken thighs and shred the meat, then return it to the pot.
- Serve hot, garnished with fresh parsley.
Notes
For extra flavor, consider adding some chopped bell peppers or carrots. Adjust the cayenne pepper for desired heat levels.
