- 500 g Bread Flour
- 375 ml Warm Water
- 100 g Active Sourdough Starter
- 10 g Fine Sea Salt
- 60 ml Extra Virgin Olive Oil
- 2 sprigs Fresh Rosemary
- 1 tbsp Flaky Sea Salt
Instructions
- In a large bowl, combine the bread flour and sea salt. Mix well.
- In a separate bowl, mix the warm water with the active sourdough starter until well blended.
- Pour the wet mixture into the dry ingredients and stir until a shaggy dough forms.
- Add 40 ml of olive oil into the dough, and knead it for about 10 minutes until smooth and elastic.
- Cover the dough with a damp cloth and let it rise for 4 to 6 hours, or until doubled in size.
- Once risen, gently deflate the dough and transfer it to a parchment-lined baking tray, spreading it gently to fill the tray.
- Drizzle the remaining olive oil over the top of the dough and use your fingers to create dimples across the surface.
- Sprinkle fresh rosemary needles and flaky sea salt on top.
- Preheat the oven to 220°C (428°F) and let the focaccia rest for another 30 minutes while the oven heats.
- Bake for 25 to 30 minutes until golden brown and crispy.
- Allow to cool slightly before slicing and serving.
