These Sourdough Cinnamon Rolls are a deliciously soft and fluffy treat, perfect for breakfast or dessert. Made using a simple overnight method, they combine the tangy flavor of sourdough with sweet cinnamon filling and creamy frosting for an irresistible experience.

- 227 grams active sourdough starter
- 170 grams whole milk slightly warm
- 2 large eggs
- 50 grams granulated sugar
- 1 teaspoon salt
- 6 tablespoons softened butter
- 500 grams all-purpose flour
- 1/2 cup softened butter unsalted
- 1 cup brown sugar packed
- 1 tablespoon cinnamon
- 1 teaspoon vanilla extract
- 1 pinch of salt
- 4 ounces cream cheese softened
- 4 tablespoons butter softened
- 1 1/2 cups powdered sugar
- 1 teaspoon vanilla
- 1–2 tablespoons milk if needed
Instructions
- In a large bowl, combine the active sourdough starter, warm milk, eggs, granulated sugar, and salt, mixing well.
- Gradually add in the softened butter and all-purpose flour, mixing until a soft dough forms.
- Knead the dough on a floured surface for about 5-10 minutes until smooth.
- Place the dough in a greased bowl, cover with plastic wrap, and refrigerate overnight.
- The next day, roll out the dough into a rectangle on a floured surface.
- Spread the softened butter for the filling over the dough, then sprinkle the brown sugar, cinnamon, vanilla extract, and a pinch of salt on top.
- Roll the dough tightly into a cylinder, then cut it into equal pieces.
- Place the rolls in a greased baking dish, cover, and let them rise for about 1-2 hours until doubled in size.
- Preheat your oven to 350°F (175°C) and bake the rolls for 25-30 minutes until golden brown.
- While baking, prepare the cream cheese frosting by beating the softened cream cheese and butter until smooth, then add powdered sugar, vanilla, and milk as needed.
- Once the rolls are done baking, remove them from the oven, let cool slightly, and top with cream cheese frosting before serving.
Notes
Make sure to use an active sourdough starter for the best results. The rolls can be left in the refrigerator overnight for an easy morning bake.
