Description

Ingredients

  • 1 cup / 240g active sourdough starter 100% hydration
  • fed and bubbly
  • 3 3/4 cups / 470g all-purpose flour
  • 1/3 cup / 65g granulated sugar
  • 1 tsp salt
  • 3/4 cup / 180ml whole milk lukewarm
  • 1 large egg
  • 1 tbsp instant yeast
  • 10 tbsp / 140g unsalted butter softened (for the dough)
  • 8 tbsp / 115g unsalted butter cold (for laminating)
  • 1 1/4 cups / 225g semisweet chocolate chips

Instructions

  1. In a large bowl, combine the active sourdough starter, lukewarm milk, egg, and instant yeast. Mix well.
  2. In another bowl, whisk together the all-purpose flour, granulated sugar, and salt.
  3. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
  4. Knead in the softened butter until the dough is smooth and elastic. Cover and let it rise for about 1 to 2 hours or until doubled in size.
  5. On a floured surface, roll out the dough into a large rectangle. Place the cold butter in the center and fold the dough over to encase the butter.
  6. Roll the dough out again and fold it into thirds. Repeat this process three times for proper lamination.
  7. Once laminated, roll the dough out to desired thickness and cut into triangles. Place chocolate chips on the wide end and roll into croissant shapes.
  8. Place the croissants on a baking sheet lined with parchment paper and let rise for another hour.
  9. Preheat your oven to 375°F (190°C). Bake the croissants for 25 to 30 minutes or until golden brown.

Notes
