- 1 cup packed brown sugar
- 1/2 cup unsalted butter softened

- 1 teaspoon vanilla extract

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
- Add in the egg and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking soda, and ground cinnamon.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the grated zucchini until evenly distributed throughout the dough.
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden and the centers look set.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Feel free to add chocolate chips or nuts for an extra texture and flavor boost. Make sure not to over-bake for the softest results.
