- 1/2 cup unsalted butter
- melted and cooled
- 3/4 cup light brown sugar

- 1/4 cup granulated sugar
- 6 tablespoons canned pumpkin puree

- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon nutmeg
- Pinch of salt
- 6 ounces chopped dark chocolate
- Flaky salt for sprinkling on top
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the melted butter, light brown sugar, and granulated sugar until well blended.
- Mix in the pumpkin puree and vanilla extract until fully incorporated.
- In another bowl, whisk together the flour, baking soda, ground cinnamon, ground ginger, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Fold in the chopped dark chocolate.
- Drop tablespoons of dough onto the prepared baking sheet, spacing them a couple of inches apart. Sprinkle a pinch of flaky salt on top of each cookie.
- Bake for 10-12 minutes, or until the edges are set and the centers look slightly underbaked.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For extra flavor, feel free to add nuts or a mix of different chocolate types. Make sure not to overbake for that perfect chewy texture.
