Ingredients

Almond flour

Powdered sugar

Egg whites

Granulated sugar

Vanilla extract

White gel food coloring (optional)

Cranberries

White chocolate chips

Heavy cream

Red royal icing or edible paint

Fine red sanding sugar (optional)


Instructions

  • Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  • In a bowl, sift together the almond flour and powdered sugar to remove any lumps.
  • In another bowl, whip the room temperature egg whites until foamy, then gradually add granulated sugar and continue whipping until stiff peaks form and the mixture is glossy.
  • Gently fold the dry ingredients into the meringue using a spatula, being careful not to deflate the mixture.
  • If using, add white gel food coloring to achieve your desired shade of white.
  • Transfer the macaron batter to a piping bag and pipe small circles onto the prepared baking sheet.
  • Let the piped macarons rest for about 30 minutes until a skin forms on the surface.
  • Bake the macarons for 15-20 minutes, then remove them from the oven and let cool completely.
  • While the macarons cool, prepare the cranberry compote by combining cranberries, sugar, water, and lemon juice in a saucepan. Cook until the cranberries burst and the mixture thickens.
  • For the white chocolate filling, heat heavy cream until just simmering, then pour it over the white chocolate chips and let sit for a few minutes. Stir until smooth, then mix in softened butter.
  • Once cooled, spread the cranberry compote on the bottom of half of the macarons, top with the white chocolate filling, and sandwich with the remaining macarons.
  • Decorate with red royal icing or edible paint and sprinkle fine red sanding sugar, if desired. Enjoy your festive creation!
