Ingredients
Almond flour
Powdered sugar

Instructions
- Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
- In a bowl, sift together the almond flour and powdered sugar to remove any lumps.
- In another bowl, whip the room temperature egg whites until foamy, then gradually add granulated sugar and continue whipping until stiff peaks form and the mixture is glossy.
- Gently fold the dry ingredients into the meringue using a spatula, being careful not to deflate the mixture.
- If using, add white gel food coloring to achieve your desired shade of white.
- Transfer the macaron batter to a piping bag and pipe small circles onto the prepared baking sheet.
- Let the piped macarons rest for about 30 minutes until a skin forms on the surface.
- Bake the macarons for 15-20 minutes, then remove them from the oven and let cool completely.
- While the macarons cool, prepare the cranberry compote by combining cranberries, sugar, water, and lemon juice in a saucepan. Cook until the cranberries burst and the mixture thickens.
- For the white chocolate filling, heat heavy cream until just simmering, then pour it over the white chocolate chips and let sit for a few minutes. Stir until smooth, then mix in softened butter.
- Once cooled, spread the cranberry compote on the bottom of half of the macarons, top with the white chocolate filling, and sandwich with the remaining macarons.
- Decorate with red royal icing or edible paint and sprinkle fine red sanding sugar, if desired. Enjoy your festive creation!
