Ingredients
1 lb ground beef (lean preferred)
1 lb red potatoes
diced
1–2 cups shredded cheddar or Colby Jack cheese
1 cup chopped lettuce or mixed greens
1 small onion
diced
1–2 tablespoons olive oil
Salt and black pepper
to taste
½ cup mayonnaise
ÂĽ cup ketchup
1 tablespoon yellow or Dijon mustard
½ teaspoon Cajun seasoning
Optional toppings: Pickles

Instructions
- Preheat the oven to 425°F (220°C). Toss the diced red potatoes with olive oil, salt, and pepper, then spread them on a baking sheet and roast for 25-30 minutes or until golden and crispy.
- In a skillet over medium-high heat, cook the diced onion until softened. Add the ground beef, breaking it apart as it cooks, and season with salt and pepper. Cook until browned.
- Prepare the special sauce by whisking together mayonnaise, ketchup, mustard, and Cajun seasoning in a bowl.
- Assemble the bowls by adding a layer of roasted potatoes, followed by the ground beef, shredded cheese, and chopped lettuce.
- Drizzle the special sauce over the top and add any optional toppings like pickles or extra lettuce.
