  • 1 white onion (diced)
  • 1 poblano pepper or jalapeno pepper (diced)
  • 2 cloves garlic (diced or minced)
  • 2 tsp chili powder
  • 2 tsp cumin
  • 1 tsp sea salt
  • 1 tbsp olive oil or avocado oil
  • 2 cups frozen corn
  • 2 med russet potatoes (peeled and diced)
  • 1 chipotle pepper in adobo sauce (diced)
  • 2 tbsp adobo sauce
  • 1 lb chicken breast
  • 6 cups chicken broth
  • 8 oz cream cheese or creme fraiche
  • 6 slices of bacon
  • 2 limes (optional for garnish)
  • cilantro (optional for garnish)
  • 1/2 cup cotija cheese

Instructions

  1. In a slow cooker, heat the olive oil over medium heat, then add the diced onion, poblano or jalapeno pepper, and garlic. Sauté until soft.
  2. Stir in the chili powder, cumin, and sea salt, mixing well for about 1 minute.
  3. Add the frozen corn, diced russet potatoes, chipotle pepper, adobo sauce, chicken breast, and chicken broth to the slow cooker.
  4. Cover and cook on low for 6-8 hours or on high for 4-5 hours, until the chicken is cooked through and potatoes are tender.
  5. Remove the chicken, shred it using two forks, and then return it to the slow cooker.
  6. Stir in the cream cheese (or creme fraiche) until melted and incorporated.
  7. Cook the bacon until crispy, then crumble it over the soup before serving.
  8. Serve hot, garnished with lime wedges, cilantro, and cotija cheese.

Notes

For a spicier soup, add more chipotle peppers or jalapenos. You can substitute the chicken breast with shredded rotisserie chicken for a quicker preparation.
