Ingredients

  • 2 pounds tomatillos
  • husked and rinsed
  • 1 medium yellow onion
  • peeled and quartered
  • 4 cloves garlic
  • peeled and smashed
  • 24 roasted hatch chiles or one fresh jalapeño
  • stemmed
  • ⅓ cup loosely packed cilantro leaves
  • 1 teaspoon kosher salt
  • 2 pounds pork sirloin roast
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon butter
  • kosher salt and freshly ground black pepper

Instructions

  1. In a slow cooker, combine the tomatillos, onion, garlic, hatch chiles or jalapeño, cilantro, and salt.
  2. In a skillet, heat olive oil and butter over medium heat, season the pork with salt and pepper, and brown the meat on all sides.
  3. Transfer the browned pork to the slow cooker, cover, and cook on low for 6-8 hours or on high for 4-5 hours until the pork is tender.
  4. Once cooked, shred the pork and stir it into the sauce. Serve warm with tortillas or rice.
