Deliciously tender beef bites simmered in garlic butter with hearty baby potatoes, perfect for a comforting meal.
Ingredients

2 lbs (900g) beef stew meat
cut into bite-sized cubes
1 lb (450g) baby potatoes
halved or quartered if large
4 tbsp unsalted butter
6 cloves garlic
minced
1/2 cup beef broth
1 tbsp Worcestershire sauce
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper
to taste
2 tbsp olive oil
Instructions
- In a large mixing bowl, season the beef stew meat with salt and pepper.
- Heat the olive oil in a skillet over medium-high heat and brown the beef cubes on all sides. This should take about 5-7 minutes.
- Transfer the browned beef to the slow cooker along with the halved baby potatoes.
- In the same skillet, reduce the heat to low and add the butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant.
- Pour the garlic butter over the beef and potatoes, then add the beef broth, Worcestershire sauce, thyme, and rosemary. Stir everything gently to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender.
- Check seasoning and adjust with more salt and pepper if needed before serving.
Notes
For extra flavor, you can add carrots or onions to the mix. This recipe is easily customizable.
