- ¼ cup all-purpose flour
- 1 cup milk
- 1 cup half and half*
- 2 tablespoons chopped fresh parsley
Instructions
- Season the chicken breasts with kosher salt and pepper, then place them in the slow cooker.
- Add the chicken stock, wild rice, garlic, onion, carrots, celery, thyme, rosemary, and bay leaves to the slow cooker. Stir to combine.
- Cover and cook on low for 6 hours or until the chicken and rice are tender.
- Remove the chicken, shred it with two forks, and return it to the slow cooker.
- In a skillet, melt the butter over medium heat, then whisk in the flour and cook until lightly golden.
- Gradually whisk in the milk and half and half until the mixture is smooth. Cook until slightly thickened.
- Stir the creamy mixture into the soup until fully integrated. Adjust seasoning with more salt and pepper if needed.
- Serve hot, garnished with fresh parsley.
