  • 3 carrots
  • peeled and diced
  • 3 stalks celery
  • diced
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • 2 bay leaves
  • 1 pound cremini mushrooms
  • thinly sliced
  • ¼ cup unsalted butter
  • ¼ cup all-purpose flour
  • 1 cup milk
  • 1 cup half and half*
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Season the chicken breasts with kosher salt and pepper, then place them in the slow cooker.
  2. Add the chicken stock, wild rice, garlic, onion, carrots, celery, thyme, rosemary, and bay leaves to the slow cooker. Stir to combine.
  3. Cover and cook on low for 6 hours or until the chicken and rice are tender.
  4. Remove the chicken, shred it with two forks, and return it to the slow cooker.
  5. In a skillet, melt the butter over medium heat, then whisk in the flour and cook until lightly golden.
  6. Gradually whisk in the milk and half and half until the mixture is smooth. Cook until slightly thickened.
  7. Stir the creamy mixture into the soup until fully integrated. Adjust seasoning with more salt and pepper if needed.
  8. Serve hot, garnished with fresh parsley.
