- 1 kg Beef Shoulder Roast
- 1 tbsp Kosher Salt
- 1 tbsp Black Pepper
- 2 tbsp Olive Oil
- 1 medium Yellow Onion
- 4 cloves Garlic
- 2 tbsp Tomato Paste
- 1 cup Red Wine
- 2 cups Beef Broth
- 2 sprigs Fresh Rosemary
- 2 tbsp Fresh Oregano
- 2 leaves Bay Leaves
- 1 cup Orzo Pasta
- 2 cups Chicken or Beef Broth
- 1 tbsp Lemon Juice
- 1 tbsp Fresh Parsley
- 1/4 cup Grated Parmesan Cheese
Instructions
- Preheat your slow cooker.
- Season the beef shoulder roast with kosher salt and black pepper.
- In a skillet, heat olive oil over medium heat. Sauté the chopped onion and minced garlic until fragrant.
- Add tomato paste and cook briefly, then deglaze with red wine, scraping the bottom for flavor.
- Transfer the beef to the slow cooker, pour in the wine mixture, beef broth, rosemary, oregano, and bay leaves.
- Cover and cook on low for 8 hours or until the beef is tender.
- In the last 30 minutes, cook orzo in a separate pot using chicken or beef broth of your choice.
- Once cooked, remove the bay leaves from the slow cooker. Shred the beef and stir in the orzo.
- Add lemon juice, garnish with parsley, and sprinkle with grated Parmesan before serving.
