Description
This Skillet Zucchini and Mushrooms dish is a quick and healthy vegetarian side, packed with flavor from sautéed vegetables and fresh herbs.

- 1 tablespoon olive oil
- 3 tablespoons butter divided
- 2 small zucchini cut into thin half moon slices
- salt and black pepper to taste
- 1 small yellow onion finely diced
- 1 pound small button mushrooms cleaned and patted dry
- 3 to 4 cloves garlic minced
- 2 teaspoons fresh chopped herbs or 1 teaspoon dried herbs
- ¼ cup vegetable broth
- chopped fresh parsley for garnish
- grated parmesan for garnish
Instructions
- In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat.
- Add the diced onion and sauté until translucent, about 3-4 minutes.
- Stir in the zucchini and mushrooms, seasoning with salt and pepper. Cook for another 5-7 minutes until the vegetables are tender.
- Add minced garlic and chopped herbs, stirring for 1-2 minutes until fragrant.
- Pour in the vegetable broth and simmer for another 5 minutes, allowing the liquid to reduce slightly.
- Remove from heat and stir in the remaining butter until melted.
- Garnish with fresh parsley and grated parmesan before serving.

Feel free to customize the herbs based on what you have available. This dish pairs well with grilled meats or as a topping for pasta.
