Description
Skillet Zucchini and Mushrooms is a delicious and healthy dish, combining tender zucchini, earthy mushrooms, and aromatic garlic, perfect as a side or main.
Ingredients
1 tablespoon olive oil
3 tablespoons butter
2 small zucchini
cut into thin
half moon slices
salt and black pepper
to taste
1 small yellow onion
finely diced
1 pound small button mushrooms
cleaned and patted dry
3 to 4 cloves garlic
minced
2 teaspoons fresh chopped herbs
use what you have on hand
or use 1 teaspoon dried herbs
¼ cup vegetable broth
chopped fresh parsley
for garnish
grated parmesan
for garnish
Instructions
- In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat.
- Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the zucchini and cook for another 5 minutes until slightly tender.
- Add the mushrooms, garlic, salt, and pepper, cooking for 5-7 minutes until the mushrooms are golden.
- Sprinkle in the fresh herbs and pour in the vegetable broth. Let simmer for an additional 5 minutes.
- Stir in the remaining butter until melted, then remove from heat.
- Serve hot, garnished with fresh parsley and grated parmesan.
Notes
Feel free to substitute the herbs with whatever you have available. This dish pairs wonderfully with grilled meats or as a topping for pasta.
