  • 1 zucchini diced
  • 1 can (15 ounces) kidney beans drained and rinsed
  • 1 can (15 ounces) black beans drained and rinsed
  • 1 can (15 ounces) diced tomatoes
  • 1 cup corn kernels (fresh or frozen)
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups cornbread cubed
  • 1 tablespoon butter
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and garlic, sautéing until the onion becomes translucent.
  2. Add the bell pepper, carrot, and zucchini to the skillet, cooking for about 5 minutes until they start to soften.
  3. Stir in the kidney beans, black beans, diced tomatoes, corn, chili powder, cumin, salt, and pepper. Bring the mixture to a simmer and cook for about 20 minutes, stirring occasionally.
  4. While the chili simmers, preheat the oven to 350°F (175°C). In a separate skillet, melt the butter over medium heat and add the cornbread cubes. Toast until golden and crispy.
  5. Serve the chili hot, topped with the cornbread croutons and optionally garnished with fresh cilantro.
