  • ¼ cup all-purpose flour
  • 2 tablespoons grated parmesan
  • 2 tablespoons olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • 1 ¼ pound boneless skinless chicken breasts
  • ¼ cup lemon juice
  • 1 lemon sliced
  • 4 cloves garlic minced
  • ¼ teaspoon red pepper flakes
  • 4 tablespoons cold butter cubed into 4 pieces
  • 12 ounces green beans cut into 1-inch pieces

Instructions

  1. In a shallow dish, mix the flour, garlic powder, and Italian seasoning. Dredge the chicken in the flour mixture to coat evenly.
  2. In a skillet, heat olive oil over medium-high heat. Add the coated chicken and cook until golden brown and cooked through, about 6-7 minutes per side. Remove from the skillet and set aside.
  3. In the same skillet, add the minced garlic and red pepper flakes; sauté for about 30 seconds until fragrant.
  4. Pour in the lemon juice and scrape the bottom of the skillet to release the browned bits. Bring to a simmer.
  5. Add the cold butter one piece at a time, stirring until melted and the sauce emulsifies.
  6. Return the chicken to the skillet along with the green beans and lemon slices. Cook for an additional 5-7 minutes, or until the beans are tender and the chicken is heated through.

Notes

For extra flavor, let the chicken marinate in lemon juice and garlic powder for 30 minutes before cooking. You can also substitute asparagus or broccoli for green beans if desired.
