Description

These Simply Pumpkin Muffins are a delightful fall treat, bursting with pumpkin flavor and warm spices. Perfect for breakfast or a snack!


Ingredients

  • 1 and 3/4 cups (219g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 and 1/2 teaspoons ground cinnamon
  • 1 and 1/2 teaspoons pumpkin pie spice
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/2 cup (120ml) vegetable oil
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (100g) packed light or dark brown sugar
  • 1 and 1/2 cups (340g) canned pumpkin puree
  • 2 large eggs
  • 1/4 cup (60ml) milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin pan with paper liners.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, pumpkin pie spice, ginger, and salt.
  3. In another bowl, mix the vegetable oil, granulated sugar, brown sugar, canned pumpkin puree, eggs, and milk until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
  5. Scoop the batter into the prepared muffin pan, filling each cup about 3/4 full.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For extra flavor, consider adding chocolate chips or nuts to the batter. Muffins can be stored in an airtight container for up to 3 days.
