Description

Ingredients

Scale
  • 1 large bunch curly green kale
  • 1 large apple (honeycrisp)
  • 1/2 cup parmesan
  • freshly grated
  • 1/2 cup walnuts
  • raw
  • 1/4 cup olive oil
  • 1/2 a lemon (juice only)
  • 1 tsp garlic powder
  • Salt + pepper
  • to taste

Instructions

  1. Wash and dry the kale thoroughly. Remove the stems and tear the leaves into bite-sized pieces.
  2. In a large bowl, massage the kale leaves with a sprinkle of salt until they soften and darken in color, about 2-3 minutes.
  3. Core and slice the apple into thin pieces, then add to the bowl with the kale.
  4. Add the grated parmesan and walnuts to the salad.
  5. In a separate small bowl, whisk together the olive oil, lemon juice, garlic powder, salt, and pepper.
  6. Drizzle the dressing over the salad and toss to combine evenly.
  7. Serve immediately or let it chill for 10 minutes to let the flavors meld.

Notes
