Ingredients

- 1 large bunch curly green kale
- 1 large apple (honeycrisp)
- 1/2 cup parmesan
- freshly grated
- 1/2 cup walnuts

- 1/4 cup olive oil
- 1/2 a lemon (juice only)
- 1 tsp garlic powder
- Salt + pepper

Instructions
- Wash and dry the kale thoroughly. Remove the stems and tear the leaves into bite-sized pieces.
- In a large bowl, massage the kale leaves with a sprinkle of salt until they soften and darken in color, about 2-3 minutes.
- Core and slice the apple into thin pieces, then add to the bowl with the kale.
- Add the grated parmesan and walnuts to the salad.
- In a separate small bowl, whisk together the olive oil, lemon juice, garlic powder, salt, and pepper.
- Drizzle the dressing over the salad and toss to combine evenly.
- Serve immediately or let it chill for 10 minutes to let the flavors meld.
Notes
For a nut-free version, you can omit the walnuts or substitute with sunflower seeds. Adjust the dressing ingredients to taste.
