Instructions

  1. Preheat your oven to 350°F (175°C) and grease a cake pan.
  2. In a blender, combine the whole orange (peeled and seeded), eggs, and Greek yogurt until smooth.
  3. In a large mixing bowl, whisk together the sugar, flour, and baking powder.
  4. Add the blended orange mixture into the dry ingredients and mix until just combined.
  5. Fold in melted butter and vanilla extract, ensuring everything is well incorporated.
  6. Pour the batter into the prepared cake pan and bake for about 30 minutes or until a toothpick inserted in the center comes out clean.
