Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a food processor, blend the whole orange until finely puréed.
- In a large mixing bowl, combine the puréed orange, eggs, and sugar, and whisk until well combined.
- In another bowl, whisk together the flour and baking powder.
- Gradually add the dry ingredients to the wet ingredients, folding gently with a spatula.
- Add softened butter and Greek yogurt to the mixture, stirring until smooth and well blended.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the orange juice glaze by mixing orange juice and sugar in a small saucepan over medium heat until the sugar dissolves.
