Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  • In a food processor, blend the whole orange until finely puréed.
  • In a large mixing bowl, combine the puréed orange, eggs, and sugar, and whisk until well combined.
  • In another bowl, whisk together the flour and baking powder.
  • Gradually add the dry ingredients to the wet ingredients, folding gently with a spatula.
  • Add softened butter and Greek yogurt to the mixture, stirring until smooth and well blended.
  • Pour the batter into the prepared cake pan and smooth the top.
