Delicious Shrimp and Avocado Bowls topped with fresh Mango Salsa and a zesty Lime Chili Sauce, perfect for a light and satisfying meal.
Ingredients
1 lb shrimp
peeled and deveined
1 tablespoon olive oil
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/2 teaspoon salt
2 cups cooked rice or quinoa
1 avocado
sliced or cubed
1/4 cup chopped fresh cilantro
1 mango
diced
1/4 red onion
finely chopped
1/2 red bell pepper
diced
1 tablespoon chopped fresh cilantro
Juice of 1/2 lime
Pinch of salt
1/4 cup mayonnaise
Juice of 1 lime
1–2 teaspoons chili sauce (like Sriracha)
1/2 teaspoon honey
Instructions
- In a bowl, combine olive oil, chili powder, cumin, paprika, garlic powder, and salt. Add shrimp and toss to coat.
- Heat a skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes on each side until pink and cooked through.
- In a separate bowl, mix diced mango, red onion, red bell pepper, cilantro, lime juice, and salt to make the mango salsa.
- In another bowl, whisk together mayonnaise, lime juice, chili sauce, and honey for the lime chili sauce.
- To assemble, place cooked rice or quinoa in bowls, top with shrimp, avocado, mango salsa, and drizzle with lime chili sauce. Garnish with chopped cilantro.
Notes
Feel free to customize the salsa with your favorite ingredients, and adjust the heat level of the lime chili sauce to your liking.
