Ingredients
1 lb shrimp
peeled and deveined
1 tablespoon olive oil
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/2 teaspoon salt
2 cups cooked rice or quinoa
1 avocado
sliced or cubed
1/4 cup chopped fresh cilantro
1 mango
diced
1/4 red onion
finely chopped
1/2 red bell pepper
diced
1 tablespoon chopped fresh cilantro
Juice of 1/2 lime
Pinch of salt
1/4 cup mayonnaise
Juice of 1 lime
1–2 teaspoons chili sauce (like Sriracha)
1/2 teaspoon honey
Instructions
- In a bowl, toss the shrimp with olive oil, chili powder, cumin, paprika, garlic powder, and salt until evenly coated.
- Heat a skillet over medium-high heat and cook the shrimp for about 2-3 minutes on each side until they are pink and cooked through. Remove from heat.
- In another bowl, combine cooked rice or quinoa with chopped cilantro and set aside.
- To prepare the mango salsa, mix diced mango, red onion, red bell pepper, chopped cilantro, lime juice, and a pinch of salt in a small bowl.
- For the lime chili sauce, whisk together mayonnaise, lime juice, chili sauce, and honey until smooth.
- To assemble the bowls, layer the rice or quinoa, top with shrimp, avocado slices, and mango salsa. Drizzle with lime chili sauce before serving.
