- 1 lb. whole Brussels sprouts or 12 oz. pre-shredded sprouts
- red pears or any variety
- dried apple or golden raisins
- roasted salted pepitas or pecans or walnuts
- Manchego cheese or Parmesan or feta
- juice of 1 whole lemon
- Dijon mustard or whole-grain mustard
- good quality EVOO
- grated garlic
Instructions
- If using whole Brussels sprouts, shave them using a sharp knife or a mandoline. If using pre-shredded sprouts, they are ready to go.
- Slice the pears thinly and set aside.
- In a large bowl, combine the shaved Brussels sprouts, pears, dried apples, and pepitas.
- In a small bowl, whisk together the lemon juice, Dijon mustard, olive oil, and grated garlic to create the dressing.
- Pour the dressing over the salad mixture, tossing to combine.
- Top with crumbled Manchego cheese and serve immediately.
Notes
For an added crunch, toast the pepitas in a dry skillet before adding them to the salad.
