Description

This Shaved Brussels and Pear Salad with Manchego is a vibrant and flavorful dish that combines crunchy Brussels sprouts, sweet red pears, and creamy Manchego cheese, perfect for any occasion.


Ingredients

  • 1 lb. whole Brussels sprouts or 12 oz. pre-shredded sprouts
  • red pears or any variety
  • dried apple or golden raisins
  • roasted salted pepitas or pecans or walnuts
  • Manchego cheese or Parmesan or feta
  • juice of 1 whole lemon
  • Dijon mustard or whole-grain mustard
  • good quality EVOO
  • grated garlic

Instructions

  1. If using whole Brussels sprouts, shave them using a sharp knife or a mandoline. If using pre-shredded sprouts, they are ready to go.
  2. Slice the pears thinly and set aside.
  3. In a large bowl, combine the shaved Brussels sprouts, pears, dried apples, and pepitas.
  4. In a small bowl, whisk together the lemon juice, Dijon mustard, olive oil, and grated garlic to create the dressing.
  5. Pour the dressing over the salad mixture, tossing to combine.
  6. Top with crumbled Manchego cheese and serve immediately.

Notes

For an added crunch, toast the pepitas in a dry skillet before adding them to the salad.
