- 2 boneless
- skinless chicken breasts
- cut into bite-sized pieces
- 2 medium zucchinis
- sliced into half-moons
- 1 cup cherry tomatoes
- halved
- ½ red onion
- thinly sliced
- 2 cloves garlic
- minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- ½ teaspoon dried basil
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes (optional)
- ½ cup shredded mozzarella cheese (or feta)
- ¼ cup grated Parmesan cheese
- 2 tablespoons fresh parsley
- chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the chicken pieces, zucchinis, cherry tomatoes, red onion, garlic, olive oil, oregano, basil, smoked paprika, salt, black pepper, and red pepper flakes. Toss until everything is well coated.
- Transfer the mixture to a greased baking dish and spread it evenly.
- Sprinkle the shredded mozzarella (or feta) and grated Parmesan cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
