Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, combine the grated zucchini and salt. Let it sit for about 10 minutes, then squeeze out excess moisture.
- In another bowl, whisk together the flour, baking powder, baking soda, black pepper, oregano, and thyme.
- In a large mixing bowl, beat the eggs, then add the vegetable oil, whole milk, and minced garlic. Mix well.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Fold in the grated zucchini, Parmesan cheese, cheddar cheese, and chopped parsley.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
