- 1/4 cup milk
- Salt

- 8 pre-cooked breakfast sausage links
- 8 flour tortillas
- 8-inch size
- soft and flexible
- 1 cup shredded cheddar cheese
- 1 tablespoon butter
- Non-stick cooking spray for the skillet
- or extra butter if preferred
Instructions
- In a large bowl, whisk together the eggs, milk, salt, and pepper until fully combined.
- Heat a non-stick skillet over medium heat and add the butter, allowing it to melt and coat the pan.
- Pour the egg mixture into the skillet and cook, stirring gently until the eggs are scrambled and set but still moist.
- Remove from heat and mix in the shredded cheddar cheese until melted.
- Lay out the flour tortillas and place one sausage link in the center of each tortilla, followed by a portion of the scrambled egg and cheese mixture.
- Roll up each tortilla tightly, folding in the sides to secure the filling.
- Return the skillet to the heat and lightly coat it with non-stick spray or butter. Add the roll-ups seam-side down and cook until golden brown, turning to brown all sides.
- Remove from the skillet, slice in half if desired, and serve warm.
Notes
These roll-ups can be made ahead of time and stored in the refrigerator for quick breakfasts during the week. They also freeze well for longer storage.
