1 ½ lbs Yukon Gold potatoes
1 lb fresh sausage
1 large onion
2 cloves garlic
2 tbsp olive oil
1 tsp smoked paprika
½ tsp dried rosemary
½ tsp dried thyme
salt and freshly ground black pepper
optional: fresh parsley for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine the cut potatoes, sausage slices, onion wedges, minced garlic, olive oil, smoked paprika, rosemary, thyme, salt, and pepper. Toss until everything is well coated.
- Spread the mixture evenly on a baking sheet in a single layer.
- Bake in the preheated oven for about 30 minutes, or until the potatoes are golden brown and tender, stirring halfway through.
- Once done, garnish with fresh parsley if desired and serve hot.
