- ¼ cup caramel sauce
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 12 ounces semi-sweet chocolate

- 1 tablespoon coconut oil or neutral vegetable oil
- ½ cup toasted shredded coconut
- ¼ cup caramel sauce
- 2 ounces melted dark chocolate
Instructions
- In a large mixing bowl, combine cookie crumbs, softened cream cheese, toasted shredded coconut, caramel sauce, vanilla extract, and salt. Mix until well combined and smooth.
- Using a cookie scoop or your hands, form the mixture into small balls and place them on a baking sheet lined with parchment paper. Refrigerate the truffles for at least 30 minutes until firm.
- In a microwave-safe bowl, combine semi-sweet chocolate and coconut oil. Heat in the microwave in 30-second increments, stirring until smooth and fully melted.
- Dip each chilled truffle into the melted chocolate, allowing excess to drip off, then return to the parchment-lined sheet.
- Sprinkle the truffles with toasted shredded coconut and drizzle with additional caramel and melted dark chocolate for decoration.
