  • 1 cup packed light brown sugar
  • ½ cup white sugar
  • 2 teaspoons vanilla extract
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup chopped walnuts
  • 8 medium pears peeled

  • 1 tablespoon lemon juice
  • ¼ cup packed light brown sugar
  • 1 ½ tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cardamom
  • 1 pinch salt
  • 1 ½ cups white sugar
  • 6 tablespoons water
  • ¾ cup heavy cream
  • 3 tablespoons unsalted butter cut into small pieces
  • 1 teaspoon kosher salt

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly spray a baking dish with nonstick baking spray.
  2. In a large bowl, cream together softened butter, light brown sugar, and white sugar until fluffy. Add vanilla extract.
  3. Gradually mix in the all-purpose flour, salt, and chopped walnuts until combined.
  4. Press two-thirds of the crust mixture into the prepared baking dish to create an even base.
  5. In another bowl, toss the sliced pears with lemon juice, light brown sugar, cornstarch, cinnamon, ginger, cardamom, and a pinch of salt until well coated.
  6. Spread the pear mixture evenly over the crust in the baking dish.
  7. Crumble the remaining crust mixture over the pears.
  8. Bake for about 30 minutes or until golden brown and the pears are tender.
  9. While the bars cool, prepare the salted caramel sauce by combining white sugar and water in a saucepan over medium heat. Stir until sugar dissolves.
  10. Once the mixture turns a rich amber color, remove from heat and carefully whisk in heavy cream, unsalted butter, and kosher salt until smooth.
  11. Drizzle the salted caramel sauce over the cooled bars before slicing and serving.

Notes

Make sure to let the bars cool completely before cutting for neat slices. You can store them in an airtight container for up to a week.
