Description

These Rocky Road Brownies combine a rich, fudgy brownie base with a decadent topping of chocolate, marshmallows, and nuts for a deliciously indulgent dessert.

  • ½ cup (100 g) brown sugar
  • 2 large eggs + 1 large egg yolk

  • 1 ¼ cup (145 g) all-purpose flour
  • 1 teaspoon cornstarch
  • ¾ teaspoon salt
  • 2 cups (340 g) chocolate chips
  • ¾ cup heavy cream
  • 2 Tablespoons corn syrup
  • ⅛ teaspoon salt
  • 2 cups (110 g) mini marshmallows
  • ¾ cup (125 g) coarsely chopped almonds
  • fine sea salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan.
  2. In a mixing bowl, combine the melted butter and cocoa powder, mixing until well blended.
  3. Add granulated sugar, brown sugar, eggs, egg yolk, and vanilla extract. Mix until smooth.
  4. In a separate bowl, whisk together flour, cornstarch, and salt. Gradually add this mixture to the wet ingredients, stirring until just combined.
  5. Pour the batter into the prepared baking pan and spread it evenly. Bake for 25-30 minutes, or until a toothpick comes out with a few moist crumbs.
  6. While the brownies cool, prepare the topping by heating the chocolate chips, heavy cream, corn syrup, and salt in a saucepan over low heat until melted and smooth, stirring constantly.
  7. Once the chocolate mixture is smooth, remove from heat and stir in marshmallows and chopped almonds.
  8. Spread the rocky road topping evenly over the cooled brownies. Optionally sprinkle with fine sea salt.
  9. Let the brownies set for about 30 minutes before slicing into squares and serving.
