Ingredients

  • each cut in half across the middle
  • then each half quartered lengthwise
  • 1 teaspoon fresh minced garlic cloves
  • 1 tablespoon extra virgin olive oil
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon Herbes de Provence or dried thyme
  • or 1 teaspoon of fresh chopped thyme
  • Freshly ground black pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the zucchini with minced garlic, olive oil, kosher salt, Herbes de Provence, and black pepper. Toss until the zucchini is well coated.
  3. Spread the zucchini mixture in a single layer on a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for 25-30 minutes, or until the zucchini is tender and slightly caramelized, stirring halfway through.
