- each cut in half across the middle
- then each half quartered lengthwise
- 1 teaspoon fresh minced garlic cloves
- 1 tablespoon extra virgin olive oil
- 1/4 teaspoon kosher salt
- 1/2 teaspoon Herbes de Provence or dried thyme
- or 1 teaspoon of fresh chopped thyme
- Freshly ground black pepper
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the zucchini with minced garlic, olive oil, kosher salt, Herbes de Provence, and black pepper. Toss until the zucchini is well coated.
- Spread the zucchini mixture in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, or until the zucchini is tender and slightly caramelized, stirring halfway through.
Notes
For an extra touch, you can sprinkle some grated Parmesan cheese on top before serving.
